Sweet Potato with Pumpkin Spice Goat Cheese

sweet potato with pumpkin spice goat cheeseIs it still pumpkin spice everything season?  I hope so because I found pumpkin spice goat cheese and whipped up this easy recipe for a sweet potato with pumpkin spice goat cheese just for my fellow pumpkin spice lovers.  How many times did I just say pumpkin spice?

My favorite grocery store closed a few months ago and I am still shopping around for a new one.  I recently decided to give Aldi a try. Aldi is a unique grocery store and if you’re not used to it, there’s a bit of a learning curve.  

The first things you will need are reusable grocery bags.  The second thing you will need is a quarter. Place your quarter in the slot at the carts to release it from a lock.  Do your shopping.  

Here’s a hint: unload your cart with the heaviest items first, because the cashier is going to throw all your groceries into another cart.  Trade your cart for the cart at the end of the check out counter, bag your groceries at the counter along the exit, and then put your cart back.  Your quarter will pop out when you lock the cart back up. Or, you might run into a friendly shopper who will hand you a quarter in exchange for your cart.  

It’s like a series of side quests just to get your weekly groceries in this store.  

Because of all that and the fact that I’m too short to reach inside to the bottom of the shopping cart, shopping at Aldi is just a little too much and I have since decided to use Instacart to get my groceries delivered. I’m still able to take advantage of the great prices Aldi has to offer and I don’t even have to leave the couch.

Anyway, Aldi is where I found this pumpkin spice goat cheese.  There were different flavors as well, so I might think about getting a few more just to try.

The pumpkin spice goat cheese has a sweet and savory flavor that goes perfectly with the sweet potato.  Try not to overdo the maple syrup drizzle because this recipe is almost sweet enough as is! 

Sweet Potato with Pumpkin Spice Goat Cheese

Cook Time 30 minutes
Total Time 45 minutes

Ingredients

  • 1 sweet potato sliced in ¼” to ½” slices
  • 1 Tbsp olive oil
  • 2 oz pumpkin spice goat cheese
  • 1/2 Tbsp half and half
  • 1 Tbsp pecans chopped
  • maple syrup for drizzling

Instructions

  1. Preheat oven 400F

  2. Toss sweet potato slices with olive oil.  Place on a parchment paper or aluminum foil lined baking sheet and bake 15 mins.  Flip and bake 15 more minutes.

  3. In a bowl, mix the goat cheese and half and half.

  4. Place about a ½ tsp of goat cheese on each slice. 

  5. Sprinkle the chopped pecans on top and drizzle with maple syrup.  Serve warm.

If you don’t have access to pumpkin spice goat cheese, mix up this pumpkin spice and add enough to flavor your goat cheese.
