Preheat oven 400F
Toss sweet potato slices with olive oil. Place on a parchment paper or aluminum foil lined baking sheet and bake 15 mins. Flip and bake 15 more minutes.
In a bowl, mix the goat cheese and half and half.
Place about a ½ tsp of goat cheese on each slice.
Sprinkle the chopped pecans on top and drizzle with maple syrup. Serve warm.
