Cucumber and Avocado Dip

cucumber and avocado dipDo you like cucumbers?  I sure do! My doctor wants me to try an anti-inflammatory diet.  I don’t diet, but I’m trying to add more anti-inflammatory foods to my snacks and meals.  Always consult your doctor or a registered dietitian nutritionist before making changes to your diet.  I did some research on anti-inflammatory foods and made a list that includes cucumbers, avocado, and sour cream.  Enter this tasty cucumber and avocado dip.

I received the cucumber in my Misfits Market box.  Most of the other ingredients I purchased from my local Weis Markets.  I know the store brand dairy products come from local dairies.  

This dip is super easy to make.  For my gastroparesis friends, feel free to remove the seeds from the cukes or omit the garlic or anything else that you can’t eat.  Luckily for me, garlic is a-okay.

My dad said he liked the cucumber and avocado dip the best with fresh veggies.  I like it best with crackers. Let me know what else you think would be good with this dip.

Cucumber and Avocado Dip

Ingredients

  • 1 large or 2 medium cucumbers peeled and diced
  • 1 avocado
  • 1 cup sour cream
  • 2-3 cloves garlic
  • Juice of half a lemon
  • Zest of one lemon
  • 1 tsp Dijon mustard
  • 2 Tbsp dill chopped

Instructions

  1. Puree all ingredients in a blender.
  2. Chill in the fridge at least one hour before serving.
