Gluten Free Brownies with Blueberry Goat Cheese

gluten free browniesI love being able to share the things I make with the people I love.  My neighbor can’t have dairy or gluten, but when she visited last weekend she said she could have goat cheese.  You know I love goat cheese, too.  I’ve had some La Bonne Vie Blueberry Vanilla goat cheese in the fridge that I really wanted to make some delicious with.  How about gluten free brownies with a creamy blueberry goat cheese swirl? Yes, please!

If you bake with coconut flour, you need to know that it’s not like regular flour.  It absorbs liquids very well and so if you substitute it for regular flour, the ratio is about ¼-⅓ cup coconut flour to 1 cup regular flour.  The brownies will thicken rather quickly, so it’s best to mix everything quickly and pour it right into your baking dish so it’s easier to spread in the dish.  I adapted the brownie recipe from this recipe for Paleo Coconut Flour Brownies from Empowered Sustenance.gluten free brownies

These gluten free brownies are thick and fudgy so a glass of milk is definitely recommended to go with them.  You might think blueberries and goat cheese don’t go with brownies, but you’d be wrong. The tangy creamy goat cheese pairs perfectly with the sweetness from the chocolate.  gluten free brownies

Ingredients

  • Brownies:
  • 1/3 cup coconut flour
  • 1/2 cup cocoa powder
  • 2 large eggs room temperature
  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • Goat Cheese Swirl:
  • 4 oz La Bonne Vie Blueberry Vanilla Goat Cheese
  • 1 egg
  • 1 Tbsp maple syrup

Instructions

  1. Preheat oven to 350 and grease an 8x8 baking dish.
  2. To make the brownie batter: In a large bowl, mix together the dry ingredients.
  3. Add the wet ingredients and stir well to combine.
  4. To make the goat cheese swirl: In a small bowl, add the goat cheese and soften in the microwave about 30 seconds.
  5. Stir in the egg and maple syrup.
  6. In the greased baking dish, pour in the brownie batter.
  7. Spoon the goat cheese mixture on top and swirl with a knife.
  8. Bake 20-25 mins.
  9. Allow to cool before cutting.
