Spring Vegetable Salad

Ingredients

stalks asparagus
cut in 1-2" pieces and blanched

radishes
sliced thin

cucumber
sliced

zucchini
sliced

olive oil
1/3
cup
balsamic vinegar
1/4
cup
goat cheese
crumbled
salt and pepper
Instructions
Toss all the vegetables in a bowl.
Make the vinaigrette by mixing the olive oil and balsamic vinegar together. Season with salt and pepper.
Mix into the vegetables.
Top with goat cheese crumbles.
Chill before serving.
