No Bake Nut Butter Oat BitesMy friend is better than your friend.  She bought me a jar of Cinnamon Roll and Chocolate Cookie Swirl from Blind Spot Nutbutters.  I am not going to say exactly how many jars from Blind Spot I have in my cupboard, but I will admit it’s over five.  Now, onto the recipe:  No Bake Nut Butter Oat Bites.  

These oat bites are fun to make, but they can be messy.  I had oats thrown all over my kitchen counter.  If you are having trouble getting the bites to stay in a round ball, add more maple syrup to get it to stick together.  I rolled them into about 1” balls which yielded 16 bites.No Bake Nut Butter Oat BitesThere are so many recipes out there for these oat bites, so I am leaving the title of the recipe generic because you can use any nut butter that you like.  I highly recommend the one that I used which is the Chocolate Cookie Swirl.  If you use this nut butter, you really don’t have to add any extras to your oat bites.  It’s very reminiscent of one of my favorite childhood granola bars.  It even has crushed up cookies mixed in.  How great is that?No Bake Nut Butter Oat Bites

Ingredients

  • 1 8 oz jar Chocolate Cookie Swirl or nut butter of your choice
  • 1 cup oats*
  • 1 Tbsp coconut oil
  • 1-2 Tbsp maple syrup

Instructions

  1. Place nut butter and coconut oil in a bowl. Microwave until melted. Stir together.
  2. Stir in the maple syrup and oats.
  3. Form into 1-2" round balls.
  4. Place on a foil lined baking sheet and refrigerate until ready to eat.

Recipe Notes

*I used baby flake oats

If you use a different nut butter such as the Cinnamon Roll, maybe throw in some raisins or if you use another variety, throw in some flax or chia seeds to make it even healthier.
