Broccoli and Pea Stir Fry with Walnuts

Ingredients

  • 2 Tbsp coconut oil
  • 2 small heads of broccoli separated into florets
  • 2-3 cups snow peas
  • 1/4 cup walnuts
  • Sauce:
  • 2 Tbsp apple cider vinegar
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 cloves garlic minced
  • 1 tsp ground ginger

Instructions

  1. Mix sauce ingredients together. Set aside.
  2. Heat coconut oil over medium heat and add the broccoli and peas. Stir fry about 5 minutes, until the vegetables are soft.
  3. Add half the sauce and walnuts and cook until the sauce is reduced. Add more sauce until desired consistency is reached.

Recipe Notes

Notes: Add in cooked chicken, shrimp, or beef prior to adding in sauce.
