Roasted Vegetable Pasta Salad

Ingredients

  • 1 eggplant chopped
  • 1 green pepper chopped
  • 1/2-1 cup green beans chopped
  • 2 cloves garlic minced
  • 8 oz pasta of choice
  • 1 cup Gazebo Room Balsamic Vinaigrette
  • 1 Tbsp fresh basil chopped
  • 1/2 cup feta or goat cheese optional

Instructions

  1. Preheat oven to 350. Grease a foil lined baking sheet.
  2. Place chopped vegetables and garlic on the baking sheet and roast 25 minutes. Use a spatula to turn the vegetables halfway through cooking.
  3. While the vegetables are cooking, prepare the pasta and drain it.
  4. In a large bowl, toss the vegetables, pasta, basil and salad dressing.
  5. Serve with feta or goat cheese if desired.
