Savory Bacon, Egg, and Cheese Oatmeal

Ingredients

  • 1 cup chicken broth
  • 1/2 cup oats
  • 1 clove garlic minced
  • 1-2 strips bacon cut in 1" pieces
  • 1 pearl onion diced
  • 1/4 cup cheddar cheese or cheese of choice
  • 1 egg
  • 1 Tbsp white vinegar
  • salt and pepper

Instructions

  1. Crack an egg into a small dish or measuring cup. Set aside.
  2. Bring a small pot of water to a boil. Add the vinegar and reduce heat to a simmer.
  3. While the water is coming to a boil, in another pot, cook the bacon over medium low heat.
  4. Set the bacon aside and add the garlic and onion to the pan. Cook until the onion is soft.
  5. Stir in the oats and pour in the chicken broth. Cook until desired consistency is reached and stir in bacon and cheese.
  6. To the pot of water with vinegar, add the egg and cook about three minutes.
  7. Spoon the oatmeal into a bowl and place the egg on top. Sprinkle on more cheese and season with salt and pepper if desired.
