Heat the olive oil in a pan over medium high heat.

Add the salmon burgers and cook each side 2-3 minutes.

To make the poached eggs on the stove top, bring a small pot of water to a simmer. Add the vinegar.

Crack the egg into a small bowl.

Swirl the water in the pan and slowly pour in the egg. Cook about 2-3 minutes.

Prepare the hollandaise sauce.

To assemble, place the salmon burgers on a plate and top each with one poached egg. Pour the hollandaise sauce evenly on top of both.
