Creamy Breakfast Polenta

  • ½ cup yellow cornmeal
  • 2 cups water
  • ¼-1/2 cup milk
  • ½ peach, sliced
  • 1 Tbsp almonds, chopped
  • ½ tsp cinnamon
  • 1 Tbsp honey
  1. Add water to a saucepan over high heat. Whisk in the cornmeal.
  2. Bring to a boil, stirring constantly.
  3. Reduce heat to medium or medium-low once thickened.
  4. Stir in milk and continue to stir until polenta reaches desired thickness.
  5. Scoop into a bowl and top with the peaches and almonds.
  6. Sprinkle on the cinnamon and drizzle the honey on top.
