Chocolate Nut Butter CookiesThe only thing that would make these chocolate nut butter cookies better would be bacon.  I do still have some homemade bacon bits in the freezer, but I was not bold enough to try them in this recipe.  Maybe next time!

I made these cookies shortly before hearing that I did not get a job that I interviewed for last week.  The position was for office manager at the county historical society.  I have my master’s degree in library science and local history is my passion.  The office manager position would have been an amazing opportunity and I am glad I was chosen to interview for it.  I am just bummed I didn’t get it.  The cookies were a fitting solace.Chocolate Nut Butter Cookies

These cookies are a great comfort food when you’re feeling bummed.  They are also great to eat just because.  They’re mostly healthy and because of the nut butter, they are pretty filling, too.  So, go ahead and indulge.  They are soft and chewy and delicious served warm and dipped in a glass of milk.

I highly recommend using Squirrely Tail Nut Butter in this recipe, because that’s what I used, but basically anything from Blind Spot Nutbutters would work great.

Ingredients

  • 1 cup nut butter
  • 3/4 cup maple sugar
  • 1 Tbsp coconut flour
  • 2 eggs
  • 1/2 cup cocoa powder
  • 1 tsp vanilla
  • 1 tsp baking soda

Instructions

  1. Preheat oven to 350.
  2. In a large bowl, mix the maple sugar, coconut flour and cocoa powder.
  3. Stir in the nut butter, eggs, vanilla, and baking soda.
  4. Spoon onto a greased or parchment paper lined cookie sheet.
  5. Bake 10-12 minutes.
